Η Νίκη Μαστροδήμου είναι μέλος Εργαστηριακού Διδακτικού Προσωπικού (Ε.ΔΙ.Π.) της Ιατρικής Σχολής του Πανεπιστημίου Κρήτης και διδάσκει στα Προπτυχιακά Εργαστήρια Χημείας και Βιοχημείας.
Είναι απόφοιτος του τμήματος Χημείας του Πανεπιστημίου Κρήτης και κάτοχος Διδακτορικού από το Τμήμα Ιατρικής του Πανεπιστημίου Κρήτης.
– Πτυχίο Χημείας από Τμήμα Χημείας του Πανεπιστημίου Κρήτης.
– Διδακτορικός τίτλος (PhD) από το Τμήμα Ιατρικής, της Σχολής Επιστημών Υγείας του Πανεπιστημίου Κρήτης.
Ανάπτυξη μοντέλων αμφιβληστροειδοπαθειών (π.χ. διαβητική αμφιβληστροειδοπάθεια) σε τρωκτικά, in vivo και in vitro. Χρήση των μοντέλων για τη μελέτη νευροπροτατευτικής δράσης διαφόρων αναλόγων όπως σωματοστατινεργικά, κανναβινοειδή, νευροτροφινών και αναστολέων ΝΟ. Φαρμακολογικός χαρακτηρισμός ουσιών με μελέτες δέσμευσης.
